    BEVERLY HILLS (Herald de Paris) — A man is as good as his kitchen. There, a new proverb in the making. Or maybe the proverb is simply the name Thomas Keller, who has left no stone un-turned in the design, implementation, and operation of his kitchens. Impeccable kitchens such as Bouchon Beverly Hills. This presents the aesthetic of being as clean and fresh as the lime green accents that lay against the industrial steel fittings and crisp white linen table cloths that fill the cavernous and stylishly tiled rooms.The crisp white linen table cloths are taped down, oh so perfectly, along the bench tops to challenge the chefs not to spill.

    My gosh, what pressure to work under and what highly tuned skills to be able to work in such an environment. Chef David Hands, within whose Bouchon’s hands are in capable charge, has obviously with his team mastered the art of the Keller kitchen well. For not only is the food beautifully presented outside, it is expertly and cleanly crafted inside.

    My delicately tart and sublime Salade aux Lentiles du Puy with anchovy toast, followed by freshly caught Idaho Rainbow trout was the perfect light meal to send me happily off on our kitchen tour. Bouchon takes pride in its fresh and available produce. Such items are in easy reach of the line crew, as are rows and rows of fresh exotic spices which no doubt were providing the wonderful smells emanating gently from the large pots of freshly steaming bouillabaisse.

    An entire room was dedicated to the home made ice cream and its natural flavorings, while next door the fresh bread ovens worked overtime for the morning rush. The staff greeted us warmly, hard at work, earnest, and clearly keen to please both their establishment and its clientele. Chef David Hands is in charge of a wonderful Keller steamship that shows no signs of abating and every sign of leaving us still wanting more-Culinary Art that is. Go, enjoy, relax and master the art of the French bistro experience.
